Shakshuka

Don’t you want a scrambled egg or just a sunny side up at your breakfast? Do you often eat this egg cooked over and over again? And do
you ever wonder what a great egg recipe can be? Oops! Stop thinking of things. Here is a recipe whose main ingredient is eggs. Let’s go, let’s cook!

Ingredients

½ cup chopped fresh flat-leaf parsley (optional)
2 cups of cubed tofu or feta (optional)
7 eggs
3 teaspoons tomato paste
½ cup vegetable oil
Rough diced garlic around 5-6 cloves
2 teaspoons salt, or to your individual preference
1 tsp sweet paprika
3 lbs fresh tomatoes, unpeeled and cut in quarters

Direction

In a large skillet, heat up 3 tablespoon of olive oil.

Add the garlic, green peppers, onions, spices, salt and pepper.

Cook and stir frequently the vegetables for about 10-12 minutes.

After that, add in the prepared tomatoes and tomato sauce.

Finally add in the sugar.

Simmer the fire until the mixture starting to reduce for about 10- 12 minutes.

Slowly blend in the seasoning depending on your taste.

Make 7 rounded “wells” using a wooden spoon into the mixture.

In each rounded “well”, gently crack and add in the eggs.

lid the skillet with the lid and simmer over low heat until the eggs are cook.

Remove the cover and add the mint and fresh parsley. Ready to serve.

Cooking Tips

I f you a bit of spiciness with this dish, you can add crushed red pepper or black pepper if you like. You can also serve with warm challah bread,
pita or your choice of bread (crusty type of bread). Enjoy eating.
