Salted Egg Chicken Rice

So, no wonder why there are so many restaurants with promotions like unlimited chicken wings and a lot more In this recipe, we are going to level up your fried chicken based on the popular Singaporean recipe. Can you imagine how delicious a fried chicken covered with creamy sauce is with various spice ingredients? That in each bite you really still left the taste out of your mouth. Isn’t it being delicious, right? Well, let’s stop imagining and let’s start cooking.

Ingredients

1 ½ kg of chicken fillets
4 salted egg yolks finely mashed and steamed
3 eggs (with egg yolk and egg white) beaten evenly
1 cup of rice flour and 1 cup of all-purpose flour
Salt, small qty
1 cup cooking oil
1 ½ tsp grind garlic
1 ½ tsp grind ginger
1 cup of breadcrumbs
120 grams low-fat butter
curry leaves, a few leaves

How to make Salted Egg Chicken Rice

Cut the chicken into chunks In a bowl, marinate the chicken with pepper and salt for about 10 minutes.

Prepare another bowl, add all-purpose flour and rice flour mixed together and season with salt.

Put the fillet chicken in the mixture for coating and in the same procedure put the chicken in the evenly beaten egg as well in breadcrumbs.

In your frying pan, start deep frying the chicken for 1-2 minutes, do not overcook. After frying, set the chicken aside.

For our sauce, prepare another pan and melt butter over medium heat.

Add garlic, ginger, curry leaves and mashed up salted egg yolk.

In the same frying pan that you are using, re-fry the chicken until it becomes golden brown.

Continue to cook until the curry leaves become smells of fragrant.

Finish, then serve.

Cooking Tips

If you want to use gluten-free alternatives, potato starch is a good choice.
