Buterscotch ice cream

There’s no hiding how much I love homemade ice cream, but sometimes at the end of the day even the thought of emulsifying something for a minute in the thermo cooker seems like a real effort, That’s why I love this ice cream-you can scoop it out and serve it straight from the freezer (even if it`s been in there for months!), The sweet and creamy butterscotch flavour is so decadent you’ll only need a small scoop … maybe.

90g golden syrup

50g dark brown sugar

500g thickened cream

240g sweetened condensed milk

160g evaporated milk

1 teaspoon vanilla extract

1 Place golden syrup, sugar and 100g cream in TC bow

l. Cook for 5 minutes, 90’C, speed 4.

2 Add condensed milk, evaporated milk, vanilla and remaining 400g cream, Mix for 30 seconds, speed 4.

3 Pour mixture into a shallow container, cover and freeze for a minimum of 8 hours.

Serve scoops straight out of the container
